Torshi is a family of tangy, crunchy, garlicky pickled vegetables rooted in Persian food culture and enjoyed across the Middle East, the Balkans, and Eastern Europe. Unlike a North American pickle that sits on the side of a burger, torshi is a side dish — a bright, acidic counterpoint served alongside a meal to cut richness and complete the plate. Our torshi is made with organic apple cider vinegar, fresh vegetables, garlic, and herbs. No preservatives, no added sugar, no oil.
The word torshi (ترشی) comes from the Persian word for "sour." It refers to a whole category of pickled vegetables enjoyed daily across Iran and neighbouring regions. Think of it less like a single recipe and more like the way "salsa" or "kimchi" describes an entire tradition. We picked the name because it says exactly what the product is: sour, bright, alive.
In some cases, your Torshi jar may release gas when opened. This is due to the natural fermentation process that occurs in each jar. Because each jar ferments individually, slight variations in gas levels can occur. This is completely normal and part of the traditional preparation method, ensuring the tangy, bold flavor Torshi is known for. If you notice sparkling or bubbling brine, rest assured it's a sign of the natural fermentation process.
Torshi is commonly relished as a delectable addition to a multi-course dining experience, and is often served as a side dish. Torshi is an ideal appetizer or mezze that pairs exceptionally well with alcoholic beverages. Additionally, it is a customary practice to serve Torshi alongside indulgent, rich and fatty dishes such as meat or poultry.Additionally, it can be enjoyed alongside sandwiches, salads, cheese, olives, and more.
For optimal enjoyment of your Torshi, we suggest consuming it within 12 months since its shelf life is typically up to 12 months when unopened. Once opened, it is important to tightly seal your Torshi bottle, and store it in the refrigerator, using only clean utensils to preserve its quality.
Yes to all three. Torshi is 100% plant-based, naturally gluten-free, and contains no added sugar — making it compatible with vegan, vegetarian, gluten-free, paleo, keto, and Whole30-style eating. It's also low in calories and rich in the natural probiotics and acidity of a traditional vinegar pickle.
Similar to other food items, opened or used Torshi cannot be returned. Nonetheless, in the event that the product is received in a damaged condition, we will provide a replacement or refund for the order.

Tangy, crunchy, and garlicky. The first bite is sharp and bright from the organic apple cider vinegar, followed by the snap of fresh vegetables and a warm garlic finish. Each variety has its own character — Mixed is the most balanced and a great starting point, Carrots lean sweeter and milder, Cauliflower is the crunchiest, Beets are deep and earthy, and Red Cabbage is punchy and vibrant. None of them are spicy-hot; the heat is in the garlic, not chili.
Unopened jars are shelf-stable and can be stored in your pantry away from direct sunlight. Once opened, keep the jar refrigerated and always use a clean utensil. Properly refrigerated, an opened jar stays fresh and crunchy for several months.
